Dolcetti is a former central or defensive midfielder. He started his career at Juventus in 1984, debuting in 1985 in a Coppa Italia match. That was his only appearance for the Bianconeri. After a loan to Novara in 1986-87, he was sold to Pisa where he spent four remarkable seasons, playing 134 games and scoring once. He then played for Messina in 1991-92 and Lucchese in 1992-93. He had another good four-year spell at Cesena from 1993 to 1997, making 139 appearances and scoring 15 goals. He retired in 2002 following seasons with Savoia, Avellino, Cuneo and two in the Italian fifth division.
A left-footed, quick and gifted player, Dolcetti possessed good technique, a high class touch and dribbling skill that he used to overcome his opponents. These qualities made him a threat inside the opposing area despite him not being a natural scorer. An able passer of the ball, he could deliver fast crosses to the box, either coming from the back or corners or the flank. Sometimes, he played in a less advanced role at Pisa, switching position with Dunga. Having had his peak at a young age, Dolcetti was a valuable player but he rarely was too involved in the game, especially when it was heated. He was a solid free kick taker which he especially proved during his time at Cesena where he also scored some penalties.
