Srbek played for DFC Prague until 1930. The midfielder spent most of his career at Sparta Prague. With Sparta, Srbek won the Czechoslovak championship in 1932 and 1936, and the team won the Mitropa Cup in 1935. In total, Srbek played 282 matches for Sparta between 1930 and 1937. In 1938, he signed for Viktoria Žižkov, where he finished his career in 1939. Srbek scored two goals in a total of 105 first division appearances, both in the 1933–34 season. Srbek scored one goal in 35 Mitropa Cup matches for Sparta: In the 2–1 victory in the replay second leg against Hungária FC on July 11, 1934, the Czech striker scored the winning goal for Sparta in the 85th minute. This victory, following a 1–2 defeat in the first leg, forced a sixth match between the two teams. This encounter ended in a 1–1 draw, and Sparta advanced to the quarterfinals by draw, but were eliminated there by SK Admira Wien.
