Ammoniaci was a right-back who played the most of his career for Cesena with which he appeared 218 times from 1966 to 1975 making the climbing from Serie C to Serie A alongside his teammate Giampiero Ceccarelli. He had many duels with big strikers like Lazio's Giorgio Chinaglia, sometimes succesfully by both tackling him or standing out using the head. Many clubs were interested to him so he eventually left Cesena exactly for Lazio where he played from 1975 to 1979 being a regular starter except during the third season due to a bad injury. He played a total of 85 matches and then he left for Palermo where his decline became. After two seasons in Sicily, a few in minor leagues at Forlì and Vado, he retired in 1984. Nicknamed "Rock" due to his way to tackle and mark his direct opponent never letting him go, Ammoniaci was a tough defender who worked hard and did simply his task without being a show-off. His toughness though was also a problem because he committed many fauls and some of those leading to a penalty. The right-back was also protagonist of two curious episodes in which he received a red card: the first one happened on 1st December 1974 during a match against Varese when he punched an opponent in the first minuted of the game; the second one happened 18th March 1979 during a derby Roma vs Lazio: he joined the match as substitute at 89' minute but the slow substitution made Roma's players angry so right after two seconds he was hit by an opponent and expelled for simulation by the referee who didn't see anything aside of Ammoniaci laying on the pitch. He also had good offensive prowess that he showed especially when playing at Lazio, sprinting forward to cross for the strikers in the middle of the opponents' area.
